Ingredients:

  • 1 large – cauliflower
  • 1 diced onion
  • 2 tablespoons – chopped parsley
  • 1 minced garlic clove
  • 16 oz – stewed tomatoes
  • 1/2 teaspoon – salt
  • 1/4 teaspoon – pepper
  • 1/4 cup – grated Parmesan cheese [optional]

Directions:

  1. Break cauliflower into small florets.
  2. Combine everything in a casserole dish.
  3. Cover and bake at 350°F for about 40 min., or till tender.
