Ingredients:

  • 1 cup – all-purpose flour
  • 1/2 cup – milk
  • 1 teaspoon – baking powder
  • 1 teaspoon – salt
  • 1 teaspoon – vegetable oil
  • 2 eggs
  • 1 can – (16 oz) whole kernel corn – drained

Directions:

  1. Heat oil (3 to 4 inches) in Dutch oven to 375°F.
  2. Mix remaining ingredients except corn with hand beater until smooth.
  3. Stir in corn.
  4. Drop by rounded tablespoonfuls into hot oil.
  5. Fry about 5 minutes or until deep golden brown; drain on paper towels.
  6. Serve with maple syrup if desired.
